Ingredients
  1. 8 oz scallops
  2. 2 tbs bread crumbs
  3. 1 tbs lemon zest
  4. 1 tbs olive oil
  5. 1 tsp parsley
  6. salt and pepper to taste
Instructions
  1. Preheat the oven to 350 degrees
  2. Place the scallops into a baking dish, drizzle the olive oil over the top. Season with salt and pepper.
  3. Mix together the bread crumbs and lemon zest. Sprinkle the bread crumb mixture over the top of the scallops and sprinkle on the parsley.
  4. Bake for 15-20 minutes or until cooked through.
